Easy vegetable recipes like this versatile comforting vegetable soup is all you need to know, for many reasons… one, it’s healthy, two it’s not fattening, three easy to cook, four it’s stylish and five it’s comforting like eating pasta.
Actually, this recipe is my answer to my sister’s Yanna Perfect New Zealand Kumara Recipe and what helped me get out of my comforting food pattern which included pasta.
I have three, or rather four nutritious, filling and packed with flavor versions of the creamy vegetable soup.
Choose depending on the vegetables you like or come up with your own.

Easy Vegetable Recipes
Recipe 1 : Ofilia’s Dikeakou- Messinezi veloute vegetable soup // pea mix

Ofilia, co-owner of the Ivy Home Collection, a company importing stylish quality furniture and decoratives prepared this pea soup as a starter.

One 500gr package green pea
2 large onions
3 carrots
2 potatoes
1/2 broccoli
1 cup broth
Salt, Pepper

In a large pot boil all the ingredients except the peas. Boil until almost tender for approximately 30 minutes. Add the peas and cook for another 10 minutes.
Puree using a blender.
Serve with Greek yogurt, freshly ground pepper and grilled prosciutto.

Carrots, leek and potato
Salt, pepper, red peppercorns
Cut vegetables cover with water and simmer for until the veg is tender. Blend until smooth, then season. She serves the vegetable soup with yogurt and red peppercorns. Super Yummy!

Recipe 3 – Alexandra’s Skaltsogianni Soup

You can, as Alexandra says, just use whatever vegetables you have in your fridge. Works every time… if you don’t mind the color. Last weekend in Paros, we ended up with a brown not so pretty version…

Recipe 4 : Trend Survivor Creamy Comforting Vegetable Soup

Get ready for nothing but minimal… but it’s my perfect vegetable soup.
1/2 broccoli
4 leeks
500 gr pumpkin
1 green pepper
4 zucchini
2 carrots
1 onion
2 potatoes
salt, mixed peppers, hot bucovo

Boil the vegetable until tender and then puree with a hand blender. The hot bucovo gives the illusion that the soup is hot even when it’s lukewarm.
