Fresh Strawberries hand-dipped in Dark Chocolate is an easy recipe my friend Katerina (Sgoura) gave me but it has three secrets, I learned the hard way.
It is a perfect low calorie dessert that is good for your health. ( You can read here about the benefits of eating dark chocolate)
After I tasted these amazing strawberries, covered with dark chocolate at my friend’s house, I knew I wanted to try the recipe at home. Katerina told me it’s easy. You melt the dark chocolate in bain marie and then dip each strawberry and let it cool. When I did it the first time I tried to melt the chocolate in low heat. (Katerina never said that but I thought why not..) Big mistake… the chocolate slightly burned but I managed to stick it on the strawberries. Then I placed my horrible looking but tasty strawberries in a plater. Big mistake number 2, they stack there. I started late, everything went wrong…big mistake number 3.
What you will need:
Dark Chocolate bars
Melt the chocolate bain marie until it is fluid. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Place on baking paper sheet.
Secret Number 1 for Fresh Strawberries hand-dipped Dark Chocolate
You must melt the chocolate in a saucepan that sits over a pan of barely simmering water (a bain marie).
Secret Number 2 for Fresh Strawberries hand-dipped in Dark Chocolate
You must place them in line on a sheet pan with parchment or waxed paper until the chocolate sets for about 30 minutes.
Secret Number 3 for Fresh Strawberries hand-dipped in Dark Chocolate
You can prepare them the day before and place them in the refrigerator.

If you have strawberries and bitter chocolate it will take you 30 min…:)
I absolutely love chocolate dipped strawberries. I had a very similar stack of failures my first time too so you are not alone. At least you’ve managed to perfect the steps now. Thanks for the tips!
Hahaha even though it is super easy … you need the tips… to get them right!
