As I was planning a family lunch I discovered Raymond Blanc’s amazing video about roasting meat to perfection. The Michelin-star chef explains in a simple inspiring way how to roast various ingredients.
Love the idea of a juicy tasty Roast Beef. It takes about 2.5 hours to cook.
Ingredients for Roast Beef
1 x 3 bone Rib of Aberdeen Angus Beef
1 Carrot,
roughly chopped 1 Onion,peeled and roughly chopped
1 pinch Salt and freshly ground black pepper
800ml Water
Tip 1 : Remove the Beef from the Fridge 3 hours before cooking so that it has time to get to room temperature
Tip 2: Preheat the oven to 170°C. Scatter the chopped carrot and onion over the bottom of the roasting tray with any beef trimmings. Season the beef with salt and pepper. Rub this in well. Place the beef on top of the vegetables and cook in the pre-heated oven for 30 minutes

I’m a fan of Raymond Blanc’s cookery books and programmes. He’s easy to follow but also entertaining. Roast beef and all the trimmings is a favourite of mine. Great video. I’m inspired now to make a roast on Sunday!
