3 Healthy Yummy Chicken Salads

A healthy yummy chicken salad is perfect for your lunch break.

I try to eat low calorie healthy meals and avoid snacks. So, usually for lunch I eat a big salad with chicken, avocado and fruits.

My favorite, the peachy chipotle chicken salad. It is packed with rice and avocado to keep you satiated. Plus, it has a touch of pan-fried halloumi that will give you the cheesy goodness you probably crave.

1.. Peachy Chipotle Chicken Tortilla and Avocado

INGREDIENTS
CHIPOTLE HONEY VINAIGRETTE
1/4 cup olive oil
1/4 cup apple cider vinegar
juice from 1/2 a lime
2 tablespoons honey
2 chipotle peppers in adobo, chopped
1/4 cup fresh cilantro, chopped
kosher salt
SALAD
1 1/2 cups cooked brown rice or quinoa
1 avocado, lightly mashed
juice from half a lime
8 ounces halloumi cheese, sliced
6 cups mixed greens
1 bell pepper, thinly sliced
1 peach, thinly sliced
1 jalapeño, sliced

2..Mediterranean Chicken and Farro Salad

INGREDIENTS
CHICKEN
1/4 cup olive oil
4 cloves garlic minced or grated
1 tablespoon fresh chopped oregano
2 teaspoons smoked paprika
1/2 teaspoon crushed red pepper flakes
juice of 2 lemons
1 1/2 pounds boneless skinless chicken breast or tenders
SALAD
1 cup dry farro
1 cup cherry tomatoes halved
1/2 cup kalamata olives pitted
1/4 cup pepperoncini chopped
1 ounce can cannelini beans drained + rinsed, 14
1 ounce jar marinated artichokes drained, 8
8 ounces fresh mozzarella torn OR bocconcini (mozz balls)
ROASTED RED PEPPER SAUCE
1 ounce jar roasted red peppers 16, or 2 roasted red peppers
1/2 cup oil packed sun-dried tomatoes
2 cloves garlic
1 teaspoon kosher salt
1/4 cup toasted almonds or pine nuts

3.. Lemon Chicken Sauté Salad

Ingredients
2 Lemons
1/4 cup Red Wine Vinegar
1 tsp cumin
1 tbsp dried oregano
1 tsp garlic, minced
8 ounce Chicken breast, diced
1 small Cucumber
1/2 cup Cherry Tomatoes
1 cup Chickpeas, cooked
1/4 cup Red bell pepper, diced
1/4 cup onion, diced
1 tbsp parsley, minced
1 5.3 oz. Non-Fat Greek Yogurt
3 stems fresh dill
1/4 cup Feta Cheese, crumbled
