Greek Salad : My Perfect Horiatiki Salata

Hi Guys!!! After a day under the hot summer sun, all I dream for lunch is a big bowl with fresh Greek salad. So, I made myself a delicious Horiatiki salata. I will give you the recipe of the world famous traditional Greek salad and then I will give you my perfect Horiatiki Salata which is a slightly different version than the original made with fresh goat cheese, xyno mitzitra and capers.

 TRADITIONAL GREEK SALAD

4-5 large, ripe, tomatoes
1 large onion
1 cucumber
1 green bell pepper
1/4 pound (113.5g) of Greek feta cheese, sliced or cumbled
dried Greek oregano (rigani)
sea salt
top quality extra virgin olive oil
1 dozen Greek Kalamata olives

Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry.

Cut the tomatoes into bite-sized irregularly shaped chunks.Peel cucumber and slice into 1/4-inch slices, cutting slices in half.  Salt lightly. Slice the pepper into rings, removing the stem and seeds.  Slice the onion into thin rings.

Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Salt lightly. Sprinkle with oregano, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad and toss in some olives. Sprinkle the cheese with oregano (and pepper if desired), mix the oil.

MY PERFECT HORIATIKI GREEK SALATA

4-5 large, ripe, tomatoes
1 cucumber
1/2 cup capers
1/4 pound (113.5g) of  xynomyzithra Greek Traditional Goat cheese
sea salt
top quality extra virgin olive oil

Follow the instruction given above and just add on top  instead of feta cheese, xynomyzithra which is a sour variant of mizithra.
